Your next favourite winter salad
I'm excited to share another winter salad recipe with you!
Introducing... the "Winter Wonderland Salad"!
Ingredients:
- 4 cups mixed winter greens (arugula, kale, spinach)
- 1 cup roasted butternut squash, diced
- 1 cup roasted Brussels sprouts, halved
- 1/2 cup crumbled goat cheese
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
- 1/4 cup crumbled applewood-smoked bacon
- 2 tbsp apple cider vinaigrette
- Salt and pepper to taste
- Fresh thyme leaves for garnish
Instructions:
- Preheat your oven to 425°F (220°C).
- Toss the butternut squash and Brussels sprouts with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and caramelized.
- In a large bowl, combine the mixed greens, roasted squash and Brussels sprouts, crumbled goat cheese, chopped walnuts, dried cranberries, and crumbled bacon.
- In a small bowl, whisk together the apple cider vinaigrette ingredients (apple cider vinegar, olive oil, Dijon mustard, salt, and pepper).
- Drizzle the vinaigrette over the salad and toss to combine.
- Season with salt and pepper to taste.
- Garnish with fresh thyme leaves and serve immediately.
