Your next favourite winter salad

I'm excited to share another winter salad recipe with you!

Introducing... the "Winter Wonderland Salad"!

Ingredients:

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Toss the butternut squash and Brussels sprouts with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and caramelized.
  3. In a large bowl, combine the mixed greens, roasted squash and Brussels sprouts, crumbled goat cheese, chopped walnuts, dried cranberries, and crumbled bacon.
  4. In a small bowl, whisk together the apple cider vinaigrette ingredients (apple cider vinegar, olive oil, Dijon mustard, salt, and pepper).
  5. Drizzle the vinaigrette over the salad and toss to combine.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh thyme leaves and serve immediately.
