  3. Add the chopped tomatoes, vegetables, and soaked beans to the pot. Stir well to combine.
  4. Add the water, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for 30-40 minutes or until the beans are tender.
  5. If using meat or fish, add it to the pot during the last 10 minutes of cooking.
  6. Serve the Oko Oba hot with a side of rice, fufu, or plantain.
