Oko Oba is a traditional Yoruba dish from southwestern Nigeria, particularly from the Oyo State. The name "Oko Oba" literally means "king's beans" in Yoruba language. It's a hearty and flavorful dish made with beans, vegetables, and sometimes meat or fish.
Here's a simple recipe to make Oko Oba:
Ingredients:
- 1 cup dried beans (such as black-eyed peas or kidney beans)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 Scotch bonnet pepper, chopped (optional)
- 1 cup chopped tomatoes
- 1 cup chopped vegetables (such as bell peppers, carrots, and potatoes)
- 1/2 cup palm oil or vegetable oil
- Salt and black pepper to taste
- 2 cups water
- Meat or fish (optional)
Instructions:
- Rinse the dried beans and soak them in water for at least 8 hours or overnight. Drain and set aside.
- Heat the palm oil or vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and Scotch bonnet pepper (if using) and sauté until the onion is translucent.
- Add the chopped tomatoes, vegetables, and soaked beans to the pot. Stir well to combine.
- Add the water, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for 30-40 minutes or until the beans are tender.
- If using meat or fish, add it to the pot during the last 10 minutes of cooking.
- Serve the Oko Oba hot with a side of rice, fufu, or plantain.
