Instructions:

- In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
- Add the mixed vegetables to the skillet and cook until they're tender-crisp, about 5 minutes.

- Remove the foil and continue baking for an additional 10-15 minutes, or until the top is golden brown and the casserole is hot and bubbly.
- Remove from the oven and sprinkle with chopped parsley, if desired.
